This is an amazingly delicious vegetarian recipe I am obsessed with! Buffalo Chickpea Quinoa Bites! They are incredibly delicious, full of flavor, protein and zero guilt!! #fitfoodiewin
3/4c sweet onion, chopped
1/2c peeled carrots, chopped
3 garlic cloves, diced/minced
1//3c uncooked quinoa
1/2 whole wheat breadcrumbs
1/2tsp pink himalayan salt
1/2tsp ground black pepper
1.5, 15oz cans of chickpeas, drained, rinsed
2-3tbsp of hot sauce OR Sweet Baby Ray’s Buffalo Sauce (more mild, I don’t do spicy) but to each their own!
1 large egg
Extra virgin olive oil
1. Heat a sauce over med-high head. Add 2tsps EVOO, swirl to coat. Add in onion, carrots, garlic and sauteé 5mins until browned or soften. Add in quinoa and 3/4c, bring to a boil, simmer and occasionally stir until quinoa forms white spirals around it. I’d say 15mins. Then spoon cooked quinoa mixture into a dish/bowl to cool. Once cooled add this quinoa mixture, breadcrumbs, salt, pepper, chickpeas and egg into a food processor. Pulse until the mixture starts to come together, to form a meatball or patty.
I chose to make meatballs and bake them in the oven for 20mins, then broiled to get a crisp crunch outside. You can fry them on the stovetop in coconut oil to make a burger or even bake the patty. Either way cook for about 20mins until warm, golden brown, whichever way you choose, even add cheese if you want! Enjoy!
